Ingredients:
1 teaspoon salt 1/2 teaspoon pepper 2-pound trimmed beef tenderloin, tied for backing Fresh parsley 1 lemon
Directions:
Preheat oven to 450 degrees F. Sprinkle salt and pepper evenly over the meat on all sides. Then place meat into baking pan. Place pan on the middle rack of oven. Roast 30 minutes for medium-rare, 35 for medium. Remove the meat from the oven and cover with foil to let it rest for 15 min. Meanwhile wash and dry the parsley. Cut the lemon into slices and set aside. Just before serving, cut the strings on the meat and discard, then lift meat onto serving platter. Slice meat 1 inch thick. Garnish the platter with the parsley and lemon slices.
