1 (10 oz.) Pkg. Leaf Spinach, Frozen in Butter Sauce-- 4 Whole Chicken Breasts, Boned & Skinned-- 1/3 Cup Dry Bread Crumbs-- 1/4 Tsp. Basil Leaves-- 2 Tbsp. Oil-- 4 oz. Shredded Part-Skim Mozzarella Cheese
Cook spinach as directed on package. Flatten chicken breasts to 1/4 inch thickness by pounding lightly between sheets of waxed paper.
In small bowl, combine bread crumbs and basil. Coat chicken with crumb mixture, pressing firmly. Heat oil in large skillet. Brown chicken on both sides. Spoon cooked spinach evenly onto chicken and sprinkle cheese over top. Cover and cook over low heat until cheese is melted. Makes 4 servings.
